  9. 1/4 cup brown sugar

  11. 1/4 cup ground pepper
  12. 1 tbsp garlic powder
  13. 1 tbsp onion powder
  14. 1 tbsp chili powder
  15. 1 tbsp dried cilantro (oregano's a good substitution)
  16. 1 tsp thyme
  17. 1/4 tsp ground cumin
  18. 1/4 tsp ground ginger
  19. Cayenne to taste (1 tsp - 1 tbsp) or skip altogether

Steps to make to make Instant Pot Ribs

  1. Rinse, then dry ribs with paper towels.
  2. Remove silverskin from back side of each rack. If you can get your fingers below the skin, it's much easier to remove in larger sections. Use paper towel for grip, if necessary.
  3. Coat each side with rub and refrigerate overnight, uncovered, on a rack inside a cooking sheet. Get you a good shaker for this bit - you'll not waste as much rub this way and you'll get a pretty even coat without having to use your fingers as much...and yes, I get the irony in calling it a 'rub' and then not wanting to rub. Get over it.
  4. Remove ribs from fridge an hour before cooking, to allow them to come closer to room temperature.
  5. Pour juice, water, and cider vinegar into a 6 qt Instant Pot, and arrange both racks such that the meat is to the outside. Liquid should almost cover meat entirely.
  6. Set Instant Pot for Meat/Stew and walk away. Quick release pressure when done.
  7. Using two tongs (if available), carefully remove ribs from pot and arrange on a rack inside a cooking sheet, bone-side down. If you're concerned about it falling apart, you can drain the liquid from the pot then place the rack on the pot and invert it over the cooking sheet. (Shown below)
  8. Brush the top with BBQ sauce and broil for around five minutes. (You can brush the bottom as well, if you're one of *those people*)
  9. Brush on additional sauce, if desired, or serve with extra dipping sauce on the side.
